Simple Piña Colada


Since I had some leftover coconut milk from the coconut macaroons as well as some crushed pineapple from the carrot cake, I thought there’s no better time to make a simple piña colada recipe. And I mean dump-everything-in-a-blender-and-you’re-done simple.

They’re super refreshing and can be ready in no time. So if you’re looking to at least feel like you’re on vacation, even if for just a few minutes, this is the drink for you. Plus, it counts as part of your portions of fruit for the day, right? And if you’re unsure which rums are vegan, check out barnivore. They have an extensive list of different alcohols and will show you which ones are vegan and which ones aren’t!

Make it a virgin piña colada

I made these light in alcohol because, really, I like to taste the fruity side of the drink. But you can easily make these completely alcohol-free by just omitting the rum or malibu and adding about 10-20g of lime juice or to taste. It’ll brighten up the mocktail and will avoid it being just a pineapple-coconut smoothie. Which, honestly, would be delicious too, but I’m guessing that’s not what you’re here for. You could even use lemon juice in a pinch! Although I would be more careful with the amount.

Make it fancy

This is a pretty basic recipe, but if you want to get creative, go ahead! You can add mango, orange juice, passion fruit juice, the possibilities are endless. And if you want to dress it up, you can place a slice of lime or pineapple to the top of the cup, an adorable little umbrella in it or even cover the rim in shredded coconut as I did in the pictures. I simply dipped the rim in simple syrup and then dipped it in the coconut.

You can make this drink with fresh ripe pineapple too. I just had the leftover crushed pineapple so I used that. And if you want your piña colada extra thick, you can freeze the pineapple before blending everything together!

Refreshing and easily customizable piña coladas that can be made in no time.

Ingredients
  

  • 470 g crushed pineapple from a can(not drained) or fresh ripe pineapple
  • 250 g full fat coconut milk, from a can
  • 30 g white granulated sugar, make sure it’s vegan
  • 50 g rum or malibu, optional
  • 150 g ice
  • 10-20 g lime juice , if you’re making it alcohol-free

Instructions
 

  • Combine all the ingredients (except the lime juice if making it alcohol free) in a blender and blend until smooth.
  • *Alcohol free: Add lime juice a little bit at a time, blending in between additions and tasting until you get your desired flavour.

Notes

  • I strongly suggest making recipes by weight, if you make them by cups I can’t guarantee that you’ll get the same results.
  • You can use lemon juice instead of lime juice in a pinch, but reduce the amount and go by taste!
  • You can freeze the pineapple prior to blending for a thicker drink. You might not need the ice in that case.
