Qu'il s'agisse de biscuits aux p\u00e9pites de chocolat faciles, moelleux, croustillants, mi-cuits, \u00e9pais, minces ou v\u00e9g\u00e9taliens. Ils sont partout. Et pourtant, j'ajoute le mien \u00e0 la liste. <\/p>\n\n\n\n<div style=\"height:45px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">Je pense que tout le monde recherche quelque chose de sp\u00e9cifique dans son biscuit, c'est pourquoi je suppose qu'il y a tant de variations. Mais chaque fois que j'en essaie un, ce n\u2019est jamais tout \u00e0 fait ce que je recherche. Soit il manque de saveur, soit il est trop sucr\u00e9 pour compenser, ou il s'\u00e9tale \u00e0 peine ou beaucoup trop (mon four en est peut-\u00eatre la cause, mais c'est tout un autre probl\u00e8me). Je ne m'attends donc pas \u00e0 ce que cette version plaise \u00e0 tout le monde. C'est pourquoi j'essaie d'\u00e9viter de qualifier les choses comme \u00e9tant la \u00abmeilleure\u00bb ou \u00abparfaite\u00bb version de quelque chose. Le meilleur plat\/dessert pour une personne pourrait \u00eatre consid\u00e9r\u00e9 m\u00e9diocre par quelqu'un d'autre, et il peut toujours y avoir une meilleure version de quoi que ce soit car la perfection n'existe pas! Ces biscuits sont moelleux au centre, croustillants sur les bords, d\u00e9licieux, et contiennent juste assez de chocolat et de sel. Et selon la m\u00e9thode de cuisson que vous choisissez, ils peuvent \u00eatre fins et hyper chewy, \u00e9pais et moelleux, ou entre les deux.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">En plus ces biscuits aux p\u00e9pites de chocolat ne n\u00e9cessitent pas de substitut d'\u0153uf comme les graines de lin, de chia, le psyllium ou les m\u00e9langes achet\u00e9s. Ils ne n\u00e9cessitent pas non plus d'ingr\u00e9dients inhabituels, juste des ingr\u00e9dients simples que vous avez probablement d\u00e9j\u00e0 dans votre garde-manger. \u00c0 moins que vous consid\u00e9rez la poudre d'amande hors de l'ordinaire, dans ce cas il y a \u00e7a.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h2 class=\"has-text-align-center wp-block-heading\" id=\"the-ingredients\"><strong>Les ingr\u00e9dients<\/strong><\/h2>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"has-text-align-center wp-block-heading\" id=\"the-fat\"><strong>L\u2019\u00e9l\u00e9ment gras<\/strong><\/h3>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size translation-block\"><strong>Huile ou beurre v\u00e9g\u00e9talien.<\/strong> J\u2019ai test\u00e9 cette recette en utilisant de l\u2019huile v\u00e9g\u00e9tale\/neutre, de l\u2019huile de noix de coco raffin\u00e9e et du beurre v\u00e9g\u00e9talien (<a href=\"https:\/\/thequaintkitchen.com\/fr\/homemade-vegan-butter\/\" target=\"_blank\" rel=\"noreferrer noopener\">cette recette<\/a>). Alors que l'huile neutre reste sensiblement la m\u00eame, mais d\u00e9veloppe \u00e9galement du go\u00fbt. Celle qui s'\u00e9tale le plus facilement est celle avec l'huile neutre. Ensuite vient celle au beurre v\u00e9g\u00e9talien, puis celle \u00e0 base d'huile de coco dont le biscuit ressort le plus \u00e9pais. Celui \u00e0 l'huile neutre brunit aussi le plus, tandis que celui au beurre v\u00e9g\u00e9talien brunit le moins puisqu'il ne s'agit pas de gras \u00e0 100%.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">En termes de go\u00fbt, les biscuits sont tous assez similaires, mais vous obtenez une l\u00e9g\u00e8re saveur de beurre dans celui fait avec du beurre v\u00e9g\u00e9talien (\u00e9videmment). Mais comme celui avec l'huile neutre brunit le plus, il d\u00e9veloppe aussi un peu plus de saveur. Les diff\u00e9rences ne sont pas assez consid\u00e9rables pour en recommander un type de gras en particulier, donc celui que vous d\u00e9cidez d'utiliser d\u00e9pendra principalement de la m\u00e9thode de cuisson que vous choisissez ou de celui que vous avez d\u00e9j\u00e0 chez vous. Quoi qu'il en soit, vous aurez des biscuits v\u00e9g\u00e9taliens aux p\u00e9pites de chocolat \u00e0 d\u00e9vorer!<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<h3 class=\"has-text-align-center wp-block-heading\" id=\"the-rest-of-the-wet-ingredients\"><strong>Le reste des ingr\u00e9dients humides<\/strong><\/h3>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Sucre.<\/strong> Il y a un peu plus de cassonade que de sucre blanc dans ces biscuits. Souvent c\u2019est 50\/50 pour des biscuits aux p\u00e9pites de chocolat, mais j'aime bien le go\u00fbt que la cassonade apporte. \u00c7a aide non seulement \u00e0 donner une saveur plus complexe, mais \u00e9galement un biscuit plus moelleux et l\u00e9g\u00e8rement plus \u00e9pais. J'ai aussi fait cette recette avec de la farine de pois chiche, qui fonctionne tout aussi bien, mais \u00e7a donne un go\u00fbt terrible \u00e0 la p\u00e2te crue et je ne pouvais pas vivre avec \u00e7a, la p\u00e2te \u00e0 biscuits est juste trop bonne. Je n'ai pas essay\u00e9 de la remplacer par une autre f\u00e9cule, mais j'imagine que l'arrow-root ou la f\u00e9cule de pomme de terre fonctionneraient tout aussi bien.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size translation-block\"><strong>Poudre d\u2019amande.<\/strong> La poudre d'amande torr\u00e9fi\u00e9e ajoute une rondeur et un go\u00fbt que vous obtiendriez habituellement du beurre ou m\u00eame du beurre noisette, comme l'a soulign\u00e9 America's Test Kitchen. \u00c7a amplifie les notes caram\u00e9lis\u00e9es des biscuits. La poudre de noisettes torr\u00e9fi\u00e9e ferait de m\u00eame. Bref, je ne sauterais certainement pas cet ingr\u00e9dient! Les barres de chocolat hach\u00e9es fondent plus facilement et vous donnent diff\u00e9rentes grosseurs de morceaux de chocolat fondu dans votre biscuit. J'ai essay\u00e9 de refroidir la p\u00e2te pendant quelques heures seulement et de faire cuire quelques biscuits, mais c\u2019\u00e9tait comme si la p\u00e2te n\u2019avait pas eu de repos du tout. Une cuisson \u00e0 180\u00b0C\/350\u00b0F les a fait  prendre trop rapidement et a donn\u00e9 un biscuit plus \u00e9pais. Plus le biscuit est gros, plus il y a de contraste entre le centre moelleux et le bord croustillant. Une boule de p\u00e2te de 1-1 1\/2 cuill\u00e8re \u00e0 soupe fait juste un petit biscuit gonfl\u00e9 car il n'y a pas assez de surface pour un grand contraste de textures. Si vous aimez vos biscuits plus \u00e9pais, cette m\u00e9thode n'est pas la meilleure. Mais pour un biscuit aux bords l\u00e9g\u00e8rement ondul\u00e9s et dens\u00e9ment moelleux, c'est g\u00e9nial! Ensuite, portionnez-la en boules sur une plaque chemis\u00e9e qui rentre dans votre cong\u00e9lateur et congelez-les jusqu'\u00e0 ce qu'elles soient solides. Cela les emp\u00eachera de se coller les uns aux autres une fois qu'elles seront dans un sac. Une fois gel\u00e9es, mettez-les tous dans un sac herm\u00e9tiquement ferm\u00e9 et congelez-les jusqu'\u00e0 2 mois.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">Vous pouvez les faire cuire congel\u00e9es de la m\u00eame mani\u00e8re que la p\u00e2te \u00e0 biscuits fra\u00eeche, mais ils seront plus \u00e9pais car l'ext\u00e9rieur cuira avant que le centre congel\u00e9 n'ait le temps de s'\u00e9taler. Vous pouvez donc taper quelques fois la plaque \u00e0 mi-cuisson pour que les biscuits s'\u00e9talent un peu plus.
