Oui, il y a des <a href=\"https:\/\/thequaintkitchen.com\/fr\/vegan-chocolate-crinkle-cookies\/\" target=\"_blank\" rel=\"noreferrer noopener\">biscuits craquel\u00e9s<\/a> et des <a href=\"https:\/\/thequaintkitchen.com\/fr\/vegan-double-chocolate-walnut-cookies\/\" target=\"_blank\" rel=\"noreferrer noopener\">biscuits double chocolat<\/a> sur le blog. Mais ce qu'il n'y a pas? Des biscuits brownies v\u00e9g\u00e9taliens (et des vrais brownies, mais \u00e7a arrivera \u00e9ventuellement). Le plus chocolat\u00e9 des biscuits au chocolat. Sans \u0153ufs et sans produits laitiers \u00e9videmment. Eh bien, environ une douzaine de tests plus tard, je peux dire que ce n'\u00e9tait pas exactement le cas. Comme c'est le sucre dissous dans les brownies et les biscuits brownies qui forme la cro\u00fbte brillante, j'ai pens\u00e9 que ce serait un bon d\u00e9but. Clairement, c'\u00e9tait un \u00e9chec complet. Ils sont sortis un peu mieux, mais toujours pas de cro\u00fbte brillante. J'ai \u00e9galement augment\u00e9 le sucre \u00e0 55 g avec 40 g d'eau et je suis pass\u00e9 de 10 g d'huile \u00e0 13 g. L'huile ajout\u00e9e <em>en plus<\/em> du beurre de cacao de plus venant des p\u00e9pites de chocolat les a rendus trop minces et croustillants pour qu'ils soient fudgy. Mais il y a la cro\u00fbte fine et brillante au moins! La meilleure ressource que j'ai trouv\u00e9e est la <a href=\"https:\/\/www.youtube.com\/watch?v=qpF5B_jHZrw\" target=\"_blank\" rel=\"noreferrer noopener\">vid\u00e9o d'Adam Ragusea<\/a> sur la cro\u00fbte de brownies. C'est incroyablement instructif et il a fait tous les tests imaginables pour \u00e9liminer toutes les variables. C'est hyper informatif.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size translation-block\"><em>Donc<\/em>, pour le test num\u00e9ro j'ai-perdu-le-compte, j'ai augment\u00e9 le sucre \u00e0 60 g mais avec 30 g d'eau. Car le sucre peut se dissoudre dans la moiti\u00e9 de sa quantit\u00e9 en eau (par poids). Avoir trop d'eau emp\u00eache le sucre de s\u00e9cher \u00e0 la surface assez rapidement pour que \u00e7a forme une cro\u00fbte brillante, c'est pourquoi je l'ai r\u00e9duit. J'ai \u00e9galement ajout\u00e9 2 cuill\u00e8res \u00e0 th\u00e9 de f\u00e9cule de ma\u00efs pour ajouter plus de moelleux, j'ai r\u00e9duit le chocolat \u00e0 35 g et j'ai un peu r\u00e9duit la farine comme j'ai ajout\u00e9 de la f\u00e9cule de ma\u00efs.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size translation-block\">Ce test \u00e9tait le r\u00e9sultat le plus proche de ce que j\u2019imaginais pour ces biscuits brownies v\u00e9g\u00e9taliens. <em>Mais<\/em>, la recette avait encore besoin de quelques ajustements. Ils \u00e9taient un peu trop textur\u00e9e sur la surface. J'ai opt\u00e9 pour un interm\u00e9diaire avec l'huile \u00e0 11g. Ils \u00e9taient biens, mais j'ai m\u00e9lang\u00e9 la p\u00e2te dans la casserole pour voir ce que \u00e7a donnerait, ce qui a fini par l\u2019\u00e9paissir un peu trop et affecter son \u00e9talement.  <\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">Pour ce qui en est de la surface, c\u2019est facilement r\u00e9solu dans la recette finale en les aplatissant simplement avec mon doigt apr\u00e8s avoir portionn\u00e9 toute la p\u00e2te. Une fois la p\u00e2te faite, elle doit passer au four rapidement pour obtenir l'ext\u00e9rieur brillant. J'ai \u00e9galement essay\u00e9 de passer la p\u00e2te durcie au micro-ondes pour la ramener \u00e0 la bonne consistance avant la cuisson, et cela n'a pas fonctionn\u00e9 non plus. Cette recette est donc parfaite pour ceux qui d\u00e9testent devoir refroidir ou reposer la p\u00e2te et veulent plut\u00f4t des biscuits <em>imm\u00e9diatement<\/em>.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">Tout \u00e7a peut donner l'impression que cette recette est difficile, mais ce n'est vraiment pas le cas. Puisqu'ils contiennent pas mal de chocolat fondu, ils durciront avec le temps et auront une texture plus croustillante, ce qui, selon ce qu\u2019on m'a dit, rappelle un poptart ou un hybride de biscuit-meringue. Les deux sont vraiment bons, \u00e7a d\u00e9pend juste de votre pr\u00e9f\u00e9rence. Vous pouvez \u00e9galement passer les biscuits croustillants au micro-ondes pour les ramollir un peu si vous le souhaitez.
