La temp\u00e9rature de cuisson l\u00e9g\u00e8rement plus basse de ce g\u00e2teau contribue \u00e9galement \u00e0 la texture l\u00e9g\u00e8re et lui donne un peu plus de volume. Alors qu'avec un gras solide, le g\u00e2teau semblerait plus rigide et durcirait consid\u00e9rablement au r\u00e9frig\u00e9rateur. Et \u00e7a ne s'arr\u00eate pas l\u00e0! Il a une teinte plus jaun\u00e2tre, un go\u00fbt style g\u00e2teau au beurre et une cro\u00fbte ext\u00e9rieure dor\u00e9e et plus prononc\u00e9e tout autour en raison de la diff\u00e9rente temp\u00e9rature de cuisson. Comme mentionn\u00e9, le g\u00e2teau durcit ainsi \u00e0 temp\u00e9rature ambiante ou au r\u00e9frig\u00e9rateur, donc les couches peuvent mieux conserver leur structure pour le tranchage, le remplissage et l'empilage.
