Mais cette cr\u00e8me caramel v\u00e9g\u00e9talienne go\u00fbte presque exactement comme je me souviens. Sans le go\u00fbt d'oeuf que je n'aimais pas dans les flans. C'est donc une r\u00e9ussite \u00e0 mon avis!<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">C\u2019est lisse, cr\u00e9meux et \u00e7a fond en bouche. De plus, il n\u2019y a pas de cuisson dans bain-marie au four. Vous faites simplement cuire le flan sur la cuisini\u00e8re, puis vous le versez sur le caramel dans les ramequins et laissez reposer au r\u00e9frig\u00e9rateur. Et boum, vous avez une cr\u00e8me caramel v\u00e9g\u00e9talienne. Commencez par faire le caramel qui va au fond des ramequins. Puisqu'il ne s\u2019agit pas d\u2019un caramel \u00e0 sec, il est important de ne pas remuer car cela pourrait favoriser la cristallisation. Alors laissez-le cuire jusqu'\u00e0 ce qu'il prenne une couleur ambr\u00e9e, en faisant tourner la casserole de temps en temps si vous voyez que \u00e7a colore de fa\u00e7on in\u00e9gale. C'est bien dans certaines applications, mais l\u2019agar a tendance \u00e0 donn\u00e9 une texture plus ferme et \u00abcaoutchouteuse\u00bb. Parfait pour ajouter de l\u2019\u00e9lasticit\u00e9 \u00e0 la cr\u00e8me caramel pour \u00e9viter qu'elle ne craque. 100% de f\u00e9cule de tapioca n'\u00e9tait pas la solution, il en r\u00e9sultait une texture \u00e9trange et visqueuse semblable \u00e0 quelque chose d\u2019extraterrestre, avec une texture bizarrement \u00ab\u00a0chewy\u00a0\u00bb. Tout comme un flan \u00e0 base d'\u0153uf, \u00e7a \u00ab\u00a0tremblote\u00a0\u00bb et \u00e7a tient bien, tout en \u00e9tant fondant en bouche et cr\u00e9meux, mais \u00e0 peine pris. Et quand le caramel est presque pr\u00eat, sortez-les pour les avoir pr\u00e8s de vous. De cette fa\u00e7on, le caramel ne durcira pas imm\u00e9diatement quand vous le versez, car il ne touchera pas une surface froide.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Il reste du caramel dur au fond de mon ramequin quand je d\u00e9moule<\/strong><\/p>\n\n\n\n<p class=\"has-medium-font-size\">Normalement, le caramel se dissout dans le flan lorsque vous le faites cuire au four. Mais ce n'est pas la fin du monde si vous ne le faites pas et qu\u2019il reste encore du caramel au fond. D\u00e9mouler un peu trop agressivement, ne pas laisser le flan prendre assez longtemps ou ne pas assez le cuire sont quelques possibilit\u00e9s.
