La p\u00e2te molle facilite l'\u00e9talement car elle ne reste pas rigide au four. Et la sensation huileuse est due au fait que l'huile ne s'\u00e9mulsionne pas dans la p\u00e2te comme le fait le beurre, d'autant plus que le beurre est souvent cr\u00e9m\u00e9 avec le sucre.
