But this vegan cr\u00e8me caramel tasted almost exactly as I remember the egg-based ones tasting. Without the weird eggy flavour I disliked about flans. So it\u2019s a win-win in my book!<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">It\u2019s smooth, creamy and just melts in your mouth. Plus, there\u2019s no baking in a water bath required. You simply cook the \u201cflan\u201d on the stovetop, pour it over the caramel in the ramekins and let it set in the fridge. And boom, you\u2019ve got vegan cr\u00e8me caramel. Start by making the caramel that goes in the bottom of the ramekins. Since this is a wet caramel, it\u2019s important not to stir it as that could promote crystallization. So let it cook down until it\u2019s a deep amber colour, swirling the pan occasionally if you see it colouring unevenly. Which worked well but it wasn\u2019t <em>exactly<\/em> the right texture. It\u2019s great in certain applications, but it does tend to have a firm and \u201drubbery\u201d (for lack of a better word) texture to it once it sets. Perfect to add \u201cstretch\u201d to the cr\u00e8me caramel to avoid it cracking. 100% tapioca starch was not the answer, it resulted in a strange and slimy alien-like blob that was weirdly chewy. Just like an egg-based flan, it jiggles, holds well, but somehow still melts in your mouth and scoops like a buttery barely set custard. And when the caramel is almost ready, take them out to have them near you. That way the caramel won\u2019t harden immediately when you pour it because it won\u2019t be hitting a cold surface.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\"><strong>There\u2019s still hard caramel at the bottom of my ramekin<\/strong><\/p>\n\n\n\n<p class=\"has-medium-font-size\">Normally the caramel dissolves into the flan as you\u2019re baking it in the oven. But it\u2019s not the end of the world if you don\u2019t and there\u2019s still some caramel left at the bottom. Unmolding a bit too forcefully, the filling not being set enough or it not being cooked enough are a few reasons that might happen. But also, flans are delicate in general since they\u2019re softly set, so there\u2019s always a chance it might happen (even with non-vegan ones), there\u2019s no need to worry about it!<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\"><\/p>\n\n\n\n<p class=\"has-medium-font-size\"><strong>My cr\u00e8me caramel isn\u2019t setting<\/strong><\/p>\n\n\n\n<p class=\"has-medium-font-size\">If the filling isn\u2019t cooked well enough on the stovetop before pouring, the starches won\u2019t be well activated. style=\"margin-bottom: 5px;\"><span style=\"display: block;\">In a (very) small saucepan, combine the sugar and water for the caramel and place on medium heat. Cook it until it\u2019s a deep amber colour <em>without stirring. <\/em>Just swirl the pan occasionally if you see that it\u2019s colouring unevenly. It\u2019s a small quantity so it\u2019ll happen fast, don\u2019t walk away from it. <strong>And please be careful when working with caramel as it gets <\/strong><em><strong>very hot.<\/strong><\/em><\/span><\/div><\/li><li id=\"wprm-recipe-3581-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Once it\u2019s a deep amber colour, take it off the heat immediately and pour an equal amount into the ramekins (it will take all the caramel exactly), swirl them to coat the whole bottom, and set aside to cool and harden.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\"><em>*To clean the saucepan, simply fill it with water and bring it to a boil to dissolve any bits of caramel left.<\/em><\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Flan<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-3581-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Pour the milk and vanilla into a small saucepan.<\/span><\/div><\/li><li id=\"wprm-recipe-3581-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">In a small bowl, whisk together the cornstarch, tapioca starch, sugars, nutritional yeast, salt and turmeric. Then whisk in about 1 tbsp of the milk until no lumps remain, and pour it all into the saucepan.<\/span><\/div><\/li><li id=\"wprm-recipe-3581-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Place over medium heat and stir constantly until it thickens. If you stop stirring for a few seconds it should bubble. Then pour it over the caramel in the ramekins.<\/span><\/div><\/li><li id=\"wprm-recipe-3581-step-1-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Cover the surface with cling film to prevent a skin from forming, and place them in the fridge to set and let the caramel dissolve. At least 6 hours (at which point there might still be some hard caramel at the bottom) or preferably overnight.<\/span><\/div><\/li><li id=\"wprm-recipe-3581-step-1-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Then to serve, run a knife around the top edge to release it, place a plate upside down over the ramekin and flip them both together to turn it out.
