I could smell it in the air as these vegan hot cross buns were baking&#8230; Slush, melting snowmen, water-filled potholes and that random snow storm we always get. Hot cross buns are <strong>soft, fluffy, lightly spiced<\/strong> and loaded with raisins and mixed candied citrus peels. So you can imagine all the lovely aromas wafting through the room. <strong>Orange and lemon zest, cinnamon, nutmeg, clove<\/strong> and the sweet sweet smell of bread.<\/p>\n\n\n\n<div aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">The recipe for this dough is like any other slightly enriched one. First step is activating the yeast in the warmed milk and sugar. While it\u2019s foaming, whisk together the flour, orange and lemon zest, salt and spices. Then pour the yeast mixture along with the oil into the flour and start mixing, then kneading.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">You can opt to do this <strong>by hand<\/strong> (10-15 minutes) <strong>or in a stand mixer<\/strong> (5-10 minutes on medium speed). It\u2019s a very easy dough to work with, so there\u2019s no problem kneading it by hand. It might seem like it\u2019s not going to work at first, but keep going and it\u2019ll smooth itself out.<\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">I used <a href=\"https:\/\/thequaintkitchen.com\/en\/candied-citrus-peels\/\" target=\"_blank\" rel=\"noreferrer noopener\">homemade candied citrus peels<\/a>, but feel free to use any kind. Place it in a lightly oiled bowl and cover it with a damp tea towel. <strong>Proofing will take 1-2 hours<\/strong> depending on the temperature of your kitchen. <\/p>\n\n\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n\n\n<p class=\"has-medium-font-size\">In the meantime, grease a 9&#215;9 inch pan. After the first proof, divide the dough into 9 equal pieces, shape them into balls and place them in the pan. When I was a kid, I always thought it was some kind of magical icing on top. They\u2019ll take 25-35 minutes or until the internal temperature reads between 90\u00b0C\/194\u00b0F and 94\u00b0C\/201\u00b0F. I strongly recommend enjoying these vegan hot cross buns  the day they\u2019re made. They\u2019ll be pillowy, soft and flavour-packed. You <em>could<\/em> keep them up to 5 days in a closed container at room tempertaure, but they\u2019ll dry out with time. About 5-10 minutes in a stand mixer at medium speed.<\/span><\/div><\/li><li id=\"wprm-recipe-3179-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Pat it out into a flat circle, place the raisins and candied citrus peels in the center, fold the dough onto itself and give it a few kneads until they\u2019re evenly distributed.<\/span><\/div><\/li><li id=\"wprm-recipe-3179-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Place the dough in a lightly oiled bowl, making sure it\u2019s all oiled to avoid a crust forming, cover it with a damp tea towel and place it in a warm place to proof for about 1-2 hours or until doubled in size. This will depend on the temperature of your kitchen.<\/span><\/div><\/li><li id=\"wprm-recipe-3179-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Once it\u2019s doubled, punch it down to deflate it and divide it into pieces weighing about 80g. Cover them back with the tea towel.<\/span><\/div><\/li><li id=\"wprm-recipe-3179-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Grease a 9X9 inch pan, ball each piece by tucking it into itself and place it in the pan.<\/span><\/div><\/li><li id=\"wprm-recipe-3179-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Cover back up with a damp tea towel and proof again for 30-60 minutes. When it\u2019s almost ready, preheat your oven to 190\u00b0C\/375\u00b0F.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Cross<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-3179-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">When they\u2019re ready to be baked, whisk together the flour and water for the cross in a small bowl. If you see that the top is browning too fast, you can cover it loosely with aluminium foil and continue baking.<\/span><\/div><\/li><li id=\"wprm-recipe-3179-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: disc;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">When you take them out, immediately brush them with the glaze.
